QUICK AND EASY BEEF CASSEROLE

1 Cup rice (brown)
1½ Cups water
½ Pound lean ground beef
1 Cup onion, chopped
1 Cup celery, chopped
1 Cup green bell pepper, chopped
3½ Cups tomatoes, diced
¼ Teaspoon salt
½ Teaspoon black pepper
¼ Teaspoon paprika
2 Small carrots, chopped
1 Cup frozen peas

In skillet, brown ground beef and drain off fat. Add rest of ingredients. Mix well. Cover and cook over medium heat until boiling. Reduce to low heat and simmer for 35 minutes. Serve hot with salad, if desired.
