CHICKEN AND BLACK BEAN SALAD, CARIBBEAN-STYLE

Salad:

2 Cups cut-up cooked chicken
¼ Cup chopped fresh cilantro
1 Large tomato, chopped (1 cup)
1 Medium avocado, peeled and chopped
1 Small yellow summer squash, chopped
1 Can (15 oz) black beans, drained, rinsed
8 Lettuce Leaves

Spicy Lime Dressing:

¼ Cup lime juice
2 Tablespoons olive or vegetable oil
1 Tablespoon honey
½ Teaspoon chili powder
¼ Teaspoon ground cumin
¼ Teaspoon salt
3 Drops red pepper sauce

In tightly covered container, shake all dressing ingredients until well blended. In large bowl, toss all salad ingredients except lettuce. Pour dressing over salad; toss. Serve on lettuce leaves.
